Steamed green tea (as opposed to pan-fired) has a softer, more vegetal character — less grassy than Japanese green teas, less astringent than Chinese gunpowder. The Zhejiang and Fujian regions produce some of the most consistent green teas in China.
The mango adds sweetness and tropical fruit aroma without making it cloying. Good entry point for people who don't normally drink green tea.
How to Brew It
Steep 1 tsp per 8oz at 175°F (not boiling — green tea goes bitter if the water's too hot) for 2–3 minutes. For iced tea, brew double-strength and pour over ice. Excellent cold-brewed overnight in the fridge at full strength.
