The Process
Sugar cane ethyl acetate decaffeination uses ethyl acetate derived from sugar cane fermentation — a naturally occurring compound — to selectively bond with and remove caffeine from the green coffee. Unlike chemical solvent processes, it leaves the flavor compounds largely intact.
The result is a decaf that actually tastes like coffee: sweet, round, and complex without the chemical or flat aftertaste of commercial decaf.
How to Brew It
Uncanny works in any brew method. The medium roast body makes it good for drip and pour-over alike. If you're making a late afternoon latte, pull it as espresso — the brown sugar notes hold up through milk beautifully.
Cold brew also works well — sweeter and rounder than caffeinated options.
